Notes from the Rainforest Foods kitchen: the perfect post-workout recovery food.

Healthy eating often goes hand-in-hand with a healthy attitude to exercise. Indeed, Rainforest Foods products do seem to be very popular with people leading a highly active lifestyle. This mousse is designed as a reward after a workout. It is quick to make and can be enjoyed by anyone, as it is a raw and vegan recipe.

The creamy texture and richness of this snack are basically rewarding. It is based on the buttery flesh of avocado, contrasted by the bite of nut butter (peanut or almond work equally well here). Hemp protein powder adds creaminess, as well as a pleasant, earthy depth to the taste. But a lot of the taste is derived from the complex aroma and flavour of Rainforest Foods Cacao powder.

More important than taste and texture is nutrition, and this snack provides an excellent hit of vitamins, minerals and recovery-promoting protein. It can be prepared and eaten at home when you get back from the gym, or taken along in a sealed container to be enjoyed as soon as possible.

Serves 2

Ingredients:

1 avocado

1 banana

3 tbsp. nut or seed butter

2 tbsp. Hemp protein powder

4 tbsp. Rainforest Foods Cacao powder

Method:

Place all the ingredients in a blender or food processor, whizz up so they all well combined.

The mousse can be eaten on its own, but is also delicious when served with some yogurt or seasonal fruit on top.
