Chia puddings are great for breakfast or as a snack. You can prep them the night before if you don’t have a lot of time in the morning and you can also take them out and about with you. They’re really quick and easy to make and don’t require any cooking.. so you won’t have to wash a pile of pots and pans either!
This recipe is suitable for vegans so is perfect if you’re taking part in Veganuary this year.
- Start by combining the chia seeds, mashed banana and almond milk in a bowl and mix well until the pudding starts to thicken and some of the liquid is absorbed.
- Add in the acai powder, vanilla and a squeeze of orange juice. Mix well.
- Leave to thicken for half an hour or overnight and serve with fresh berries and whatever other toppings you’d like.
